From telling embarrassing stories, giving helpful advice, and being able to find just about everything, moms are awesome. Treat yours this Mother’s Day with easy Sheet Pan Pancakes. Pancakes can be filling, fun and something everyone can enjoy.

All of us want to give the mothers in our lives the best Mother’s Day ever. This recipe is sure to create a Mother’s Day to remember with the easiest breakfast-in-bed ever.

These Sheet Pan Pancakes are a great way to start your mother’s special day on the right foot. They are even healthy. By using the whole-grain pancake mix and topping with fruit, we are adding fiber to this dish. Fiber helps keep us fuller longer and may help support a healthy digestive system. Another great part of this recipe is that it is kid-friendly. It is safe for the kids to help prepare the sheet pan pancakes. The sheet pan used to cook these in is cold, so they can help add toppings without you having to worry about anyone burning themselves, unlike if decorating pancakes over a hot skillet.

Sheet Pan Pancakes
Serves 10

All you need:
2 cups Hy-Vee whole-wheat pancake and waffle mix
1½ cups Hy-Vee 2% reduced-fat milk
2 Hy-Vee large eggs
2 tbsp Hy-Vee canola oil
2 tsp Hy-Vee vanilla extract
1 tsp Hy-Vee cinnamon
1 cup desired toppings, such as fresh or frozen fruit, chocolate chips, nuts, etc.

All you do:
Preheat oven to 350 degrees. Line a 15x10x1-inch baking sheet with aluminum foil; spray with nonstick cooking spray and set aside.

In a medium bowl, mix together pancake mix, milk, eggs, canola oil, vanilla and cinnamon. Pour batter into prepared baking sheet. Use a spatula to spread pancake batter to the edges of the pan.

Sprinkle top of pancakes with desired toppers, and bake 10-12 minutes or until pancakes have risen, edges pull away from the sides of the pan, and the center has set.

Remove pan from oven and cut into 20 pieces.
